Well… it’s THAT time of year once again… time to make some Holiday Spritz Cookies! Making spritz cookies every year during the Christmas season has become one of my baking traditions.

Years ago my family gave me a spritz cookie press, and I’ve been using it ever since, to whip up batches of these little buttery Christmas cookies.

We eat quite a few of them, but what I enjoy most is giving most of them to friends and family! Plates are piled high with holiday spritz cookies and other homemade treats. It’s what I LOVE to do at Christmas time!

Do I Need Special Equipment To Make Holiday Spritz Cookies?

Yes. You will need a spritz cookie press to make these holiday spritz cookies, but they are fairly inexpensive, and available in stores or online.

This recipe makes oodles of these delicious holiday spritz cookies. You can see in the picture how many patterns there are available to design these yummy treats.

Here’s mine… been using it for years!

Typically a cookie press comes with several disc inserts which the cookie dough is pressed through to form different shapes. All you do is make the dough, color the dough with food coloring as desired, insert dough into cookie press, press, and voila! Holiday Spritz Cookies!

Out comes these perfectly shaped little holiday spritz cookies, which are then baked for a very short time. That’s it. See how easy it is to make holiday spritz cookies?

Ingredients
  • 1 1/2 cups butter (3 cubes)
  • 1 cup granulated sugar
  • 1 large egg
  • 2 Tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 4 cups all purpose flour
  • 1 teaspoon baking powder
  • food coloring (if desired, to create a variety of colors!)
Instructions
  1. Preheat your oven to 400 degrees.
  2. In a large bowl, or stand mixer bowl, cream the butter and sugar thoroughly. Add the egg, milk, vanilla and almond extract. Beat these in very well.

  3. In a large bowl, stir the flour and baking powder together until well combined. Add the flour mixture to the creamed mixture a little at a time. Continue mixing until the dough becomes smooth and all flour has been incorporated. Do not chill the dough. NOTE: If you want to color the dough, add food coloring to various quantities of dough and mix thoroughly until color you desire has been achieved.

  4. Place dough into the cookie press canister, and press cookies out onto an ungreased cookie sheet. (This is easiest if you put the nozzle directly onto the cookie sheet). Change discs to make different shapes, as desired. It's even fun to place pieces of different colored dough into the canister and get multi-colored cookies!
  5. Bake cookies at 400 degrees for 6-8 minutes... do not brown. Remove cookies from baking sheet and place on wire rack to cool. Enjoy!

Here’s a really easy recipe for Pecan Squares, or as a lot of people call them, Pecan Pie Bars. I love to bake these delicious treats during the Holidays.

If you like pecan pie, you will love these Pecan Squares. It’s just that simple! These bars are perfect for taking to a party (if you’re the “designated dessert-bringer”). These pecan squares are equally good  sitting out on the kitchen counter to snack on!

Another option for these sweet dessert bars is to be devoured by hordes of ravenously hungry houseguests, OR to give to friends on a platter of holiday goodies. My fun thing to do is give plates of Christmas goodies to our neighbors, with a few of these bars included!

How Many Pecan Squares Will This Recipe Make?

This recipe makes 4 dozen of these sweet and chewy pecan squares; and as an added bonus, they freeze well, also. Just think, if you want, you can stick some in the freezer and grab them whenever you have the urge for pecan pie. How deliciously convenient… and dangerous… (trust me, these are GOOD…)

Ingredients
For crust:
  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 cup butter , softened
  • 1/2 teaspoon salt
For pecan filling:
  • 4 eggs
  • 1 1/2 cups light or dark corn syrup
  • 1 1/2 cups granulated sugar
  • 3 Tablespoons butter , melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups chopped pecans
For chocolate drizzle (optional):
  • 1/2 cup semi-sweet chocolate chips , melted (to drizzle on top of finished bars, if desired)
Instructions
  1. Preheat oven to 350 degrees.

To make the crust:
  1. In a large bowl, mix together the flour, sugar, butter and salt until the mixture turns into coarse crumbs. Press the crumbs firmly (and evenly) into a greased 15 x 10 x 1 inch baking pan. Bake crust at 350 degrees for 20 minutes. Remove from oven when done.

  2. While crust is baking, prepare the pecan filling: In a large bowl, combine the eggs, corn syrup, sugar, melted butter, and vanilla extract, until well combined. Stir in the chopped pecans. Spread the pecan filling evenly over the top of the baked (hot) crust.

  3. Bake bars at 350 degrees for 25 minutes or until they are "set" in the middle. Remove pan from oven and cool on a wire rack. Drizzle cooled bars with melted chocolate, if desired. Once bars are completely cooled, cut into 4 dozen bars, and serve!

Candied Citrus Peels

Over the years, I’ve made chocolate drizzled, Candied Citrus Peels, made from oranges and lemons during the holidays, to add to the gift baskets of Christmas goodies I give to friends and family.  They are delicious and are a unique treat!

Candied citrus peels are easy to make and require only a few ingredients. I found these to be quite a unique gift idea, and they are delicious, too! I’ve made this recipe using both orange AND lemon peels. Both are wonderful, but my personal favorite is definitely the candied orange peels, because I might possibly have a genetic weakness for chocolate and orange… oh mercy!

Making Candied Citrus Peels Is Fairly Simple But Has a Few Steps

These take a bit of prep work (nothing hard at all, though), and involves several hours of drying time, but the results are worth it, especially when you consider how inexpensive these are to make, when contrasted with how expensive they are to BUY!

The process is pretty simple. Basically you repeat the cooking process three times to rid the citrus peels of bitterness. then the peels are cooked in a simple sugar syrup. The peels are then fully dried, then decorated the next day with a chocolate coating or drizzle (to fancy them up)! That’s it! You can make as many, or as few as you like.

How Candied Citrus Peels Are Made

Boil citrus peel strips in water, then drain and boil again two more times. This process is done, because it softens the peels and removes some of the bitterness.

After boiling the peels 3 times, cook the candied citrus peels in a sugar/water mixture for 15 minutes.

Citrus peels are cooked in a boiling sugar and water mixture for 15 minutes.

Dry Candied Citrus Peels Overnight

Dry the cooked candied citrus peels on wire racks overnight or until completely dry.

After drying completely overnight, the peels are now completely dried, and are not as shiny. The candied citrus peels can be eaten now, as is, or they can be decorated with white or dark chocolate.

Decorating Citrus Peels With Chocolate Makes Them Look Fancy

Here are some  of the candied citrus peels (orange), dipped 3/4 of the way in melted semi-sweet chocolate. Chocolate and orange is a favorite flavor combination for me.

Ingredients
  • Oranges or lemons (Enough to make 2 cups of sliced peels. I used 6.)
  • Water
  • 1 cup sugar (for syrup)
  • 1/4 cup sugar (for rolling cooked peels in, (IF NOT DIPPING IN CHOCOLATE)
  • Semi-sweet chocolate
  • White chocolate
Instructions
  1. Score your orange or lemons with sharp knife. Cut peel into thin strips. Remove as much of the white "pith" as possible (it's really bitter).
  2. Put the peel strips into a medium saucepan. Cover the peel with cold water. Bring to a boil over medium high heat. Once it begins boiling, reduce heat and simmer for 8 minutes. Drain water.
  3. **Repeat the above process with the peels 2 more times.**
  4. Once you have boiled the peels 3 times, wash the pan and set peels aside.
  5. In medium saucepan, bring 1/2 cup water and 1 cup granulated sugar to a boil, stirring twice. Once water is boiling and sugar is dissolved, add the peels to the pan. Simmer peels in syrup on low heat for about 15 minutes (most of the syrup will be absorbed).
  6. Remove peels with tongs to wire rack. **IF YOU ARE NOT PLANNING TO DIP FINISHED SLICES IN CHOCOLATE, THEN ROLL THEM IN SUGAR AFTER THEY HAVE DRIED FOR ABOUT AN HOUR** Place sugar coated peels back on rack to dry at least 4 hours, but preferably overnight. IF YOU ARE DIPPING OR DRIZZLING THESE IN CHOCOLATE, THIS STEP IS NOT NECESSARY!
  7. To decorate, melt semi-sweet chocolate or white chocolate (or both in separate batches) in a double boiler or in the microwave, depending on how you choose to decorate the peels. Be careful not to burn the chocolate. If melting them in microwave, cook in 30 second intervals, stirring after each 30 seconds, until smooth. Dip or drizzle melted chocolate over peels and place back on wire rack to completely dry. Keep peels stored in a cool place to prevent chocolate from melting. Enjoy

The cook time indicated INCLUDES approximately 4 hours of drying time...don't freak out and think these take that long to actually prepare. The whole cooking process takes about an hour and a half to get them to the point of being ready to dry.

Wow… Thanksgiving is just around the corner. Time to start thinking about turkey, dressing, potatoes and the other traditional side dishes that will be prepared, including these amazing Pecan Praline Yams, baked with brown sugar, coconut, butter and pecans!

Family Holiday Traditions

I grew up having yams (or sweet potatoes) at every single Thanksgiving meal. My mom (a Texas girl) always made the yams the same way a lot of people from the South eat them. The yams (or sweet potatoes) were mashed, and served with marshmallows melted on the top. I thought they were okay, but they weren’t anything I couldn’t live without at Thanksgiving.

THESE Pecan Praline Yams are a far different story. They have become one of my favorite parts of our Thanksgiving meal since I began making them about 15 years ago! Now these absolutely delicious praline yams are a favorite family holiday tradition!  Here they are, fresh pecan praline yams, straight out of the oven. It’s even a double batch!

How I Found The Original Recipe

I originally found the recipe many years ago on a large can of Princella Yams. This is a name brand with the big cans of yams you can find at most any grocery store. I decided to try the recipe printed on the can just to see if they were any good. Believe me, they are delicious!

Praline Yams are topped with chopped pecans, butter, brown sugar, and coconut! It all bakes together to form a sweet little crust on top of the yams. Oh My Goodness. These praline yams are so very good.  See how the ingredients form a nice crumbly crust on top of the yams once baked? Yum.

We Serve Pecan Praline Yams At Thanksgiving!

This recipe is ridiculously quick to prepare, and I think that’s fantastic, especially with all the other traditional dishes I make for Thanksgiving. You can prepare this recipe and have it in the oven in practically no time.

We enjoy traditional dishes, like Whole Berry Cranberry Orange Sauce, Homemade Dinner Rolls, Toll House Pie,  Rainbow Jello Salad and Mom’s Famous Cream Cheese Ball. You might also want to try my recipes for Candied Sweet Potatoes, Quick Easy Cornbread Stuffing, or Lemon Hazelnut Green Beans.

Ingredients
  • 29 oz. can of yams , drained (this is the large size can)
  • 1/3 cup chopped pecans
  • 1/3 cup coconut
  • 1/3 cup packed brown sugar
  • 3 Tablespoons all purpose flour
  • 3 Tablespoons butter , melted
Instructions
  1. Preheat oven to 350 degrees.
  2. Place drained yam pieces into an ungreased casserole dish in a single layer (8x8 - use 9x13 if doubling this recipe).
  3. In a small bowl, mix the remaining ingredients together. Sprinkle the crumbly mixture over the top of the yams, to cover.
  4. Bake, uncovered, at 350°F. for 35 - 40 minutes. Serve while hot, and enjoy!

Recipe Notes

This recipe is EASILY doubled. It is also perfectly good to bake ahead of time, then cover with foil and reheat before serving. This sure helps on a busy day of food prep for a Thanksgiving meal.

I really like the slightly crisp outside on these wonderful, sweet cookies. The inside is chewy coconut and tastes amazing. The taste of these chocolate-dipped coconut macaroons is complemented by dipping the bottoms of each treat in melted chocolate, then drizzling some on top. Yum!

If you like coconut and chocolate, you’re gonna love these chocolate-dipped coconut macaroons! They are very easy to make, and taste great any time of the year.

I tend to make these yummy treats each December for the holidays. They are easy to plate up, and are fun to give to friends and neighbors for Christmas. There’s a lot of love shown to those you care for, when you give them a homemade food gift!

These chocolate-dipped coconut macaroons are a great treat to add to your homemade food gift list to bless family or friends with over the holidays, or ANY TIME during the year.

The recipe makes approximately 2 dozen of these beautiful macaroons, and they are pretty simple to make. The coconut cookie mixture is mixed, formed into balls, then baked. Once done, the bottoms are coated with chocolate, then chocolate is drizzled over the tops. EASY!

I hope you will give them a try! They’re fun to make them during the holidays, but since when do we need a special holiday to eat a great cookie, right? I really hope you enjoy these delicious macaroons!

Ingredients
For cookies
  • 5 cups shredded , sweetened coconut (20 oz.)
  • 6 large egg whites
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
For chocolate base and drizzle
  • 6 oz. semi-sweet chocolate
  • 1 Tablespoon vegetable shortening
Instructions
  1. In a large bowl, place the egg whites, sugar, salt, vanilla and almond extract. Whisk these ingredients together until they are fully incorporated; mixture will be a bit foamy. Add the coconut to the egg mixture, and stir until well combined. Cover the bowl with plastic wrap; refrigerate for approximately 30 minutes. This mixture will thicken.

  2. While mixture is refrigerating, preheat your oven to 375 degrees. Make sure your oven racks are set in the middle and lower positions. Place parchment paper on the bottoms of two large baking sheets. Spray the parchment paper with a non-stick spray or grease the paper.

  3. With wet (clean) hands, roll 1 Tablespoonful of the macaroon mixture into a round ball. (You can also use a cookie scoop if desired, but find it easier to use my hands). Place each of the "dough" balls onto the prepared baking sheets, spacing them 1 inch apart. You should have approximately 24 macaroons.
  4. Bake macaroons at 375 degrees for 13-15 minutes. Halfway through baking time, rotate baking sheets (from one rack to the other for even baking). When done, the macaroons should be light golden brown on top. Remove from oven. Keep macaroons on the baking sheets while they cool, for about an hour. They need to be completely cooled before removing from baking sheets or dipping in chocolate glaze. Once macaroons have completely cooled, lay a clean piece of parchment paper on counter, then make the chocolate glaze.

  5. To make glaze: Melt the semi-sweet chocolate and 1 Tablespoon shortening in a microwave. Cook on high for 45 seconds. Stir, then continue to cook in 30 second increments, stirring after each increment, until chocolate is smooth. Be careful not to overcook and burn the chocolate.
  6. Carefully (macaroons are delicate) dip the bottom of each macaroon into the melted chocolate (just enough to cover), then place macaroon on clean parchment paper to let chocolate harden. Repeat with remaining macaroons. Use remaining chocolate to decoratively drizzle over tops of macaroons.

  7. Let macaroons cool, at room temperature, until the chocolate is completely "set". This will take about 30-45 minutes. Keep macaroons stored in an air-tight container for best results! Hope you enjoy them!

Recipe Notes

Note: If you do not want to use vegetable shortening when you make the chocolate glaze, simply omit it, and proceed per instructions. I use it, because I it thins out the chocolate slightly, and makes the chocolate a bit shinier, but choose your own preference!

My Mother-In-Law Elsie made these delicious, soft and chewy Date Roll Cookies all the time, and in her memory I decided to make them and post the recipe!

She always made them for her family, and she made them for her friends! Elsie traditionally made her date roll cookies for us at Christmas, and mailed them from whatever state she lived in at the time. These cookies are THE cookie I will always associate with her.  When I see them or the recipe, I cannot help but think of Elsie.

She’s been in heaven for a couple of years now, but I still make these date roll cookies occasionally (usually at Christmas time, in her honor). They are soft, chewy and delicious… and my husband and I love them. I hope you will, also!

Date Roll Cookies Are Easy To Prepare

A simple cookie dough is made and rolled out. A date and nut filling is cooked, then spread over the dough, and then it is rolled into log shapes. The dough logs for the date roll cookies are refrigerated until really firm, then the cookies are sliced and baked!

The date roll cookies are very easy to make… the length of time specified in the recipe below is inclusive of “chilling the dough” time. I usually make the dough in the morning, and come back to it later in the day to slice and bake. No big deal.

Ingredients
For the cookie dough:
  • 1 cup butter , melted, cooled to room temp
  • 4 cups all purpose flour
  • 2 cups brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 eggs , beaten slightly
For the filling:
  • 1 pound dates , chopped
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/2 cup chopped walnuts or pecans
Instructions
  1. To prepare the filling: In a medium saucepan on medium-low heat, cook the filling ingredients until soft and thick (the dates will break down as you cook). Stir the mixture constantly as you cook, so the filling won't burn. Remove from heat, but keep the mixture "warm" until ready to spread onto dough.
  2. To prepare the cookie dough: In a large bowl, mix the eggs with the melted, room temperature butter. Add the dry ingredients; mix well to combine thoroughly. Divide the dough in half. On a lightly floured work surface, roll each half of the dough (one at a time) into a rectangle. Dough should be about 1/4 inch thick. Your dough will end up being 6-7 inches wide, as well. Shape into a distinct rectangle, using your fingers to shape the dough.

  3. Spread half of the warm (not hot!) date filling over the entire surface of the dough. Roll the dough up tightly starting from the long side of the dough. Once rolled into a log shape, carefully place the roll onto a baking sheet. Repeat process with other half of dough. Cover the two rolls with saran wrap or foil, and chill them in the refrigerator for an hour and a half. (At this point, if you want to save one of the rolls of dough for another time, simply wrap it in saran and foil; place back in refrigerator (will last for a couple weeks) or freezer (longer storage). This dough freezes well)

  4. When ready to bake, preheat oven to 350 degrees. Slice the dough roll into thin slices (1/4 - 1/2 inch). Place slices 2 inches apart on ungreased baking sheet. Bake at 350 degrees for 8-10 minutes. Don't overbake. When done, carefully remove baking sheet to a wire rack. Let cookies cool for 5 minutes, then remove from pan to the wire rack. Enjoy!

Recipe Notes

**The long prep times included chilling the dough time.These only take a few minutes to make once dough is chilled.
Make as many or as few of these delicious cookies as you wish. If you want to make a few at a time, cut as many slices as you want; put the rest of the dough back in freezer or refrigerator. If freezing the dough, remember to thaw completely before baking, but slice dough while partially frozen for best results.

Red, White and Blue Fruit Tart

July 4th is just around the corner! Time is flying by…does it feel like that to you? It sure does to me. Time to get planning. Last year I made each of us a Red, White and Blue Fruit Tart for dessert, to celebrate Independence Day!

I’d never made individual fruit tarts like this before, but knew where to start: my standard pie crust recipe (from my Mom). As to everything else…unlimited as to what I could do.  I figured why not experiment and see if I could make a fruit tart like I’ve seen in bakeries before?

I knew I needed to make a strawberry glaze to make it just right, so I went in search of a “good” glaze recipe (similar to a strawberry pie glaze). I found one and forged ahead, determined to make a fruit tart worthy of the ol’ red, white and blue celebration!

This Fruit Tart Is A July 4th Treat Worth Making

Here’s the result… I added a baked pastry star to really add some patriotic spirit, and guess what? These fruit tarts were actually quite delicious…and festive! The red strawberries, blue blueberries (not to be redundant or anything), flaky crust, coupled with a dollop of white whipped cream makes these a July 4th treat worth making!

How To Save Time Making These Tarts

They were fairly easy to prepare, also, which is always a plus in my book! If you want to cut corners and take even less time to put these together, I suggest using pre-made pie crusts or pre-made tart shells, courtesy of your local grocery store.

That would really cut down on the time involved to make the crusts… but if you’re a die-hard like me, you really prefer making your own crust.  Whatever works best for you…that’s my mantra.

I used miniature tart pans that have removable bottoms, which made it very easy to remove the tarts from the pans once completed. They aren’t very expensive…I think I bought 4 of them for around $8 last year. I sure have gotten lots of good uses out of them, and would recommend them for this dessert. I’m pretty sure a miniature pie pan could also be used to prepare these tarts.

When ready to serve, remove the red, white and blue fruit tarts from the pans and place on plates. They look wonderful, especially when served with a cookie “star” on top along with a dollop of whipped cream.

Ingredients
For Pastry Crust:
  • 2 cups unsifted all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup vegetable shortening
  • 5-7 Tablespoons cold water
For Fruit Filling:
  • 25-30 fresh strawberries , de-stemmed, hulled, sliced in half
  • 1 cup fresh blueberries
For Strawberry Glaze:
  • 2/3 cup granulated sugar
  • 1 cup water
  • 4 Tablespoons strawberry jello powder
  • 4 Tablespoons cornstarch
For Garnish:
  • Colored decorating sugar (for decorating pastry stars)
  • Whipped cream
Instructions
  1. TO MAKE THE PASTRY CRUST AND THE DECORATIVE STARS: : Mix flour and salt in large bowl (or food processor). Cut in the shortening, using a pastry blender if preparing by hand, or in the food processor, until the crumbs are pea-sized. Sprinkle the dough with the water (begin by only using 5 Tablespoons, then add additional water, as needed), Mix together until a dough ball forms and holds together (don't get it too wet, though).
  2. Place dough ball on a lightly floured surface and roll out (just like you are making a pie crust). Invert a pastry pan over the dough and cut out a circle that is a bit larger than your tart pan. Repeat until you have 4 tart dough circles cut out. Spray each tart pan with a non-stick baking spray. Gently place each dough circle into the tart pans, using your fingers to press lightly into the pan. Try to keep the crust an even thickness. Prick the crust in various places with the tines of a fork to help alleviate some "shrinkage" as the crust cooks.
  3. With the leftover pastry dough, cut out star shapes. Brush stars lightly with water, then sprinkle generously with colored decorating sugar. Bake pastry shells and stars in a 400 degree oven. The tart shells will need to cook for approximately 10 minutes or until golden brown. The stars will take a little less time (so keep an eye on them!-you don't want them to get too brown). When done, remove from oven to a wire rack and let cool completely. Do not remove tart pans until right before you serve them!
  4. TO MAKE THE FILLING: In a medium sized bowl, mix the halved strawberries and blueberries. Set aside.
  5. TO MAKE THE STRAWBERRY GLAZE: Mix the sugar, water, strawberry jello powder, and cornstarch in a medium saucepan. Stir well to combine, then bring to a boil. Boil for 1 minute. Remove from heat. Set aside and let sauce cool slightly.
  6. TO ASSEMBLE FRUIT TARTS: Fill each tart shell with strawberry/blueberry mixture. Add additional fruit (if needed to fill). Carefully spoon the strawberry glaze over the fruit. Divide it between the 4 tarts. Leaving the tarts still in the tart pans, place in refrigerator for a minimum of 3-4 hours.
  7. When ready to serve, carefully remove the tart from the pan, add a pastry star to top of tart, and garnish with a generous dollop of whipped cream.
  8. Serve and enjoy!

Chocolate chips and butterscotch chips are melted in a double boiler, and then combined with peanuts until coated. The chocolate butterscotch peanut clusters are then dropped by spoonfuls onto wax paper or aluminum foil, and allowed to firm up before eating.

If you can pour and stir…you can make these! It’s THAT easy.  I’ve been making chocolate butterscotch peanut clusters for years, and have always enjoyed how quick to make and delicious they are. You can even get “fancy” and drizzle the chocolate butterscotch peanut clusters with a simple vanilla/powdered sugar icing, if desired (but not necessary). I’ve done that a couple times!

Ingredients
  • 6 ounces semi-sweet chocolate chips
  • 2 cups butterscotch chips
  • 12 ounces salted cocktail peanuts
Instructions
  1. Melt the chocolate and butterscotch chips in a double boiler (chips in small pot, which is sitting on top of a pot of boiling water-be careful not to get any water into chocolate or chocolate will seize up).

  2. When chips have melted, remove from heat and stir in peanuts until coated.
  3. Drop peanut clusters by rounded spoonfuls onto wax paper.
  4. Let the chocolate butterscotch covering harden before serving. Enjoy!

The quick and easy recipe for Peanut Butter Bon Bons (truffles) is one of our family’s favorites!  These chocolate covered treats are a tradition in our home over the Holidays!

I don’t know about you, but I love peanut butter!  Ever since I was a little girl, I’ve enjoyed eating peanut butter bon bons, peanut butter crunch cookies, peanut butter and jelly sandwiches, and many other dishes featuring peanut butter. I come by this love of peanut butter honestly, because one of my biggest memories of my old grandma was always seeing her eating peanut butter and banana sandwiches.

Making Peanut Butter Bon Bons Is A Tradition

These simple bon bons (also known as truffles) are one of the goodies I almost always make at Christmas time for family and friends. These tasty peanut butter treats (whatever you want to call them) are so delicious, it’s hard to eat only one!

I’ve been making peanut butter bon bons (sometimes called “buckeyes”) for years and years. I don’t even know where I got the original recipe! My recipe is written out on an old, stained 3×5 index card – aren’t all the GOOD ones like that?

How Are Peanut Butter Bon Bons Made?

The peanut butter bon bons are easy to make. A creamy peanut butter filling is blended, rolled into balls, and refrigerated until firm. They are coated in a chocolate covering, and refrigerated again, until the chocolate firms up. That’s it!

Sure do hope you will give the peanut butter bon bons a try. I tend to make them at Christmas time, but I think you will find them wonderfully delicious any time of the year!

Peanut Butter Bon Bons

Ingredients
For bon bons:
  • 12 Tablespoons butter (1½ sticks) (or margarine-whatever floats your boat!)
  • 18 oz. creamy peanut butter (small jar)
  • 16 ounces powdered sugar (16 oz. box) (confectioner's)
For chocolate coating:
  • 6 ounces semi-sweet chocolate chips
  • 2 Tablespoons vegetable shortening
Instructions
  1. Using an electric mixer, cream the butter and peanut butter together in a large bowl until thoroughly mixed and creamy. Add powdered sugar; mix until smooth. Mixture will be thick.

  2. Using a spoon, scoop out mixture and roll/shape into (approx.) 1 inch balls between your hands. Place rolled bon bons onto a wax or parchment paper lined baking sheet. Store in refrigerator to chill for a couple of hours.

  3. Right before the bon bons are done "chilling", prepare chocolate coating mixture to dip them in: Place the chocolate chips and the vegetable shortening in a microwave-safe bowl. Microwave on high for 30 seconds. Remove. Stir chocolate and shortening. Place back in microwave and microwave for 30 additional seconds. Remove and stir. (You do it this way to prevent the chocolate from burning). By now the chocolate and shortening should be completely melted and smooth. If not (some microwave temps vary), put it back in for 15 seconds and stir. Remove from microwave. *Tip: If the chocolate is still too thick for dipping, just add a tiny bit more shortening and microwave for a few seconds.* (If you prefer, you can also prepare the chocolate and shortening in a double-boiler...again...whatever works for you).

  4. Remove bon bons from refrigerator and dip each one completely in melted chocolate. I use a toothpick inserted into bon bons to dip into chocolate, then remove the toothpick and fill in the small hole on top of bon bon with additional chocolate. As each bon bon is dipped, place on wax or parchment paper to allow chocolate time to "harden".

  5. When chilled, place each bon bon in a small paper candy holder, and refrigerate! Enjoy.
